Not all of them, just the boring ones. There are many applications that
run under "Mac Classic" that require the real-time capabilities of the
pre-OSX kernel. Until they manage to implement something resembling
real-time performance under MacOS X, a whole lot of computers will stick
with OS 9.x lest they invalidate half the reason for owning a Mac in the
first place (and make some very expensive software apps
worthless). Hopefully Apple, theoretically catering to the "media" market,
will see fit to include the kernel features that are actually needed for
many professional media applications.
