In their book Life Extension, Durk Pearson and
Sandy Shaw say that the use of a microwave oven
is preferable to conventional heating modalities
since the microwave will not destroy nutrients as
convention heating will. However, Science News
(02/14/98) reports that this is not the case with
respect to vitamin B12. The reported study showed
that a microwave destroyed as much B12 in milk in
6 minutes as conventional heat did in 25 minutes.
The short article also points out that B12 is one of the B vitamins that helps to reduce the levels of harmful homocysteine in the body.
