I recall from Richard Feynman's lecture on color vision, that brown is
a contrast effect involving the perception of low-intensity yellow
light, and I know from experience with various optical filters that
one can get colors that are perceived as yellowish by attenuating the
blue end of the spectrum in a wide variety of ways, and I think that
mechanisms of scattering and absorption favor such attenuation.
That's not necessarily to say I am convinced I am right, but I think
it's a plausible explanation.
