Concerning prions, you might wish to start with the recent article by 
Stan Prusiner (the originator of, and major contributor to, the prion 
concept) in Scientific American, January 1995, pp.48-57, entitled "The 
Prion Diseases", which also lists references for further reading.

Concerning viroids, another Scientific American article (January 1981, 
pp.66-75, entitled "Viroids") as an introduction or, more recently, a 
book I edited: "The Viroids", Plenum Press, NY, 1987, which is one 
volume in the series "The Viruses," edited by H.Fraenkel-Conrat and 
R.R.Wagner).
